GOT FRUIT?
Snack Suggestions:
- Orange sections and grapes, plain or with added fruit juice
- Canned Fruit plus: Add orange sections, grapes, apples, bananas to canned fruit.
- Baked apples or pears: Sprinkle with brown sugar and bake at 3500 for 1 hour.
- Cottage cheese and fruit Peaches, apricots, grapes, apples, or berries go well with cottage cheese
- Fruit Snack Bowl fill with small packets of applesauce or dried fruit: raisins, apricots, mangoes.
Yogurt smoothie:
- 1 cup vanilla yogurt
- 3/4 cup frozen or fresh strawberries, blueberries, raspberries, blackberries, or canned peaches.
- 1 ripe small banana, peeled and cut up (optional)
- Wheat germ sprinkled on top or mixed in (optional)
Blend in blender until smooth.
Orange Section Salad:
- 6 cups torn greens or lettuce
- 2 oranges, peeled and sectioned
- ¼ cup (or more) of thin slices of red onion
Dressing for Salad:
- 3 Tb fresh orange juice
- 2 Tb wine vinegar
- 3 Tb oil (olive or safflower oil preferred)
- 1/8 tsp salt
- ½ tsp minced orange rind
Combine greens, oranges, and onion in a salad bowl.
Combine dressing ingredients and toss with the salad just before serving.
Strawberry Sauce:
- 2 tsp cornstarch
- ¾ cup frozen unsweetened blueberries or strawberries, thawed and crushed
- 2 tsp lemon juice
- ½ cup water
- 2 - 4 Tb honey ( or more, to taste)
Put all ingredients in a blender and blend till smooth.
Add more honey if needed.
Serve on pancakes, French toast, or waffles. Or add to hot cereal.
